Okay, I have taken the brownie recipe in "Deceptively Delicious-Simple Secrets to Get Your Kids Eating Good Food" By Jessica Seinfeld and adapted it with more whole food/ refined sugar free ingrediants. I have created YUMMY YUMMY Chocolate Cake Squares (They aren't chewy like brownies without the brown sugar) It is a must try, your kids will never know the secret goodness they are eating, and the raw peanut butter chocolate frosting to goood to be true.
Chocolate Cake or Brownies
Non Stick Cooking Spray
3 ounces semisweet, bittersweet chocolate or carob chips
½ cup carrot puree
½ cup spinach puree
1 cup xylitol (add ¾ c xylitol and ¼ c molasses for brownies)
¼ cup unsweetened cacao powder (or cocoa powder)
2 T coconut oil (softened)
2 tsp vanilla extract
2 Large Egg Whites
1 cup oat flour or wonder-flour (spelt, barley, brown rice= parts) for cake or 3/4c. for brownies
½ tsp baking powder
½ tsp salt
1. Preheat oven to 350 F. Coat an 8X8 pan with cooking spray
2. Separate egg whites from egg yolks: mix egg whites with mixer until soft peaks form. Slowly add in xylitol until stiff moist peaks form.
3. While eggs are mixing melt chocolate chips and coconut oil in a double broiler. Mix together melted chocolate, coconut oil, vegetable purees, cacoa powder, and vanilla, then whisk together for 2-3 minutes until creamy and smooth.
4. Combine together dry ingredients: flour, baking powder, and salt.
5. Into the egg mixture pour 1/3 of the chocolate batter and 1/3 dry ingredients stirring continually and alternate combining the dry ingredients and chocolate batter until all is combined and mixed well.
6. Pour batter into pan and bake for 35-40 minutes. Cool completely in the pan before cutting into 12 servings. (Spinach flavor only totally disappears when completely cooled)
Raw Peanut Butter Chocolate Frosting
(Adapted from: The Feel Good Cookbook by: Jonell West Francis)
Melt and stir in double boiler (bowl over steaming water- don’t let mixture get too hot; keep mixture under 118 degrees)
½ c raw honey
3 T raw coconut Oil
¼ c raw Cacao powder
1 c raw peanut butter (or Adam’s Naturally Peanut Butter)
1 tsp vanilla
When all ingredients are stirred together making a creamy smooth substance, remove from steam and let cool until set to make frosting, (or drizzle the yummy deliciousness hot over your cake- your choice.)

Isn't life crazy? I've been waiting for an update. Looks like you're got a busy one on your hands, but the darned cuteness makes up for all she does, huh!
ReplyDeleteAnd the cake looks de-lish. I have that deceptively book. Made the brownies once, with spinach puree, totally fooled our friend Bob who doesn't eat anything like that! The frosting sounds yummy.
